Frazies


A frazie is an old heraldic name for a strawberry. These are strawberry custard tarts, which look amazing.

I do these tarts in a fancy pastry case shaped like a ducal crown, with little strawberry leaves around it. I gave the design to my friend Ross who turned it into a 3D cookie cutter for me. It takes some finesse to use.

Inside, there’s a baked strawberry custard (5 eggs + 1 yolk, 1 cup flour, 1 cup cream, 1 cup milk, 1 cup sugar, pinch salt, finely chopped strawberries (about 1 per 2 tarts), cook at 160C).

Then I top with some whipped cream, and some fresh strawberry on top.

They are always a hit, and my signature dish at the moment.
