Tasting nights


Before we run a major feast, we usually have tasting nights to try out the dishes.

You don’t need to do every dish, as the actual feast will usually include some old favourites. But for the new dishes, and innovative ways of serving old ones, it’s well worth doing.

We do tend to invite our old friends to these, because we like their company. Do consider inviting some newbies: it’s great to feel included, they will learn a lot about medieval cooking, and you get some fresh perspectives.

After the practice run, we often do vary the cooking techniques, the seasoning and the presentation. You also get a good feel for the quantities you will need at the feast.
